Cookie Butter Kiss Cookies

Today’s recipe isn’t healthy, low-fat, low-carb or low-calorie. These cookie butter kiss cookies won’t be featured in my cookbook or showcased on Cooking Light or Eating Well. But they are a staple on my mom’s famous Christmas Eve cookie plate, a favorite among our family members and one cookie that makes every single person smile when they eat it. And that’s reason enough for me to share it with y’all!

Now this recipe differs a bit from my moms since I’m pretty sure she still has no idea what cookie butter is. And when I’m spoon-deep in yet another jar, I totally wish I had that same problem. I don’t know why this stuff is SO INSANELY ADDICTING but it is. Well, actually that’s a lie. I know why it is. It’s made from cookies ground up into a creamy butter. You’d have to be insane not to want to stick a straw in it and drink it.

In addition to cookie butter, I also added some of my new favorite peanut butter, PB Crave. They are an all-natural brand of PB that comes in an assortment of the most perfect flavors. To give these a double dose of cookie perfection, I added PB Crave’s cookie nookie, which is peanut butter blended with, you guessed it, COOKIE BUTTER!

I made these on a whim for our ugly Christmas sweater party on Saturday. I didn’t have a whole lot of extra time to make a dessert. So I figured, why not make a simple cookie that my family loves? Maybe it’s the cookie butter or just the fact that I was having a good baking day, but these turned out even better than I hoped. They puffed up like gorgeous crinkly pillows and the chocolate kisses fit beautifully right in the center. And they didn’t just look pretty either. 36 cookies were made for the party and only 3 remained on Sunday morning.

We only had about 15 people over, too. Even though my mom is making 16,000 cookies for the holidays, I’m bringing a batch of these home. Mostly because they are so good and I want to share them, but more because I want to eat them on the ride to Ohio and am craving cookie dough like woah.

Cookie Butter Thumbprints

Easy kiss cookies

Yields about 36 – 40 cookies. Slightly adapted from Bake at 350.
Prep time: >10 minutes
Cook time: 12 – 14 minutes

Ingredients: 

  • 1/2 stick unsalted butter, softened
  • 1/2 cup PB Crave Cookie Nookie peanut butter
  • 1/4 cup cookie butter
  • 1/3 cup white sugar
  • 1/3 cup brown sugar
  • 1 large egg, room temperature
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 36 Hershey’s Kisses, unwrapped
  • + 1/2 cup white sugar for rolling

Directions: 

  1. In a large mixing bowl, beat the butter, peanut butter, cookie butter, white sugar, brown sugar and egg together. Beat until soft, fluffy and creamy. Stir in the vanilla and beat. Gradually add the baking soda, salt and flours. Beat to combine.
  2. Cover the dough with saran wrap and chill in a fridge for about 2 – 4 hours.
  3. Once chilled, preheat oven to 350 degrees F. Line a cookie sheet with parchment paper. Add about 1/2 cup of white sugar into a shallow bowl. Shape the dough into 1 inch balls and roll into the white sugar. Place the cookies 1 inch apart from each other.
  4. Bake for about 12 – 14 minutes. While still warm, use a small spoon to press a thumbprint into the center of each cookie. Let cool for about 1 – 2 minutes. Once slightly cooled, press an unwrapped Hershey’s kiss into the center.

When they offered to send me a piece of their clothing, I immediately chose the signature hoodie. I legitimately wear this at least once a week. I’m not lying when I say that. It’s SO soft, comfy and perfectly fitted. I may not be in the BEST shape, but I do like to flaunt what I got 🙂

Please disregard the photos, I’m horrible at selfies. But I honestly LOVE this hoodie. I’ve even gone running in it and it repels the sweat amazingly. With the new year vastly approaching, getting fit is definitely a priority for me, as I know it is for many of you. That’s why I’m so excited to share this giveaway with you! I’m not ashamed to admit this, but more often than not, the reason I decide to make cookies is based on the fact that I just want to eat the dough. I mean, the smell of cookies baking is intoxicating (just ask realtors) and the final product is always incredible, but there’s just something so…naughty? wrong? embarrassingly awesome? about eating raw cookie dough right from the bowl.

Want to hear an admission that I’m just a teensy bit ashamed of admitting? I ate the dough to these roasted banana & rum cookies whilst sitting on the couch, in yoga pants, watching Deck the Halls. Now, the part I’m most embarrassed about is the fact that I’m admitting to you that I watched Deck the Halls, not that I ate cookie dough on our fancy pants couch.

The inspiration for these little nuggets came from a recipe I made LONG, LONG AGO in a different life and world. Well, not different life, but about 4 years ago. It was the second Christmas we spent in DC and I had this wacky idea to do 12 sweets for santa on this blog. After searching the interwebs, I found a dessert I knew I had to try, roasted banana bars. They turned out so perfect, I ended up making two batches. One for my husband and I and one for the people at my job. Both batches were gone the very next day.

I’m actually surprised it took me 3 years to make these again. Instead of making the same exact recipe, I decided to turn them into slightly boozy cookies for #captainstable. Because, well, it’s Christmas and that’s all people eat now. Just like my molasses and ginger cookies, these turned out unbelievably soft, fluffy, moist and perfect. Really, they’re perfect. They have the consistency of cake and soft banana bread, but in cookie form. It’s a caookie. (Say like this: CAAAA–OOOOOOO–KEY).

Roasted Banana & Rum Cookies

Yields about 24 -28 cookies. Recipe adapted from Simply Recipes & My Recipes.
Prep time: >15 minutes
Cook time: About 14 minutes

Ingredients: 

For the bananas: 

  • 2 1/2 bananas, sliced
  • 2 tablespoons melted butter
  • 4 1/2 tablespoons brown sugar
  • 1/3 cup Captain Morgan spiced rum

For the cookies: 

  • 1 stick unsalted butter
  • 3/4 cup brown sugar
  • 1/2 teaspoon vanilla extract
  • 1 large egg, room temperature
  • 2 cups all purpose flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • Dash of salt

For the icing:

  • 1 1/4 cup powdered sugar
  • 2 tablespoons unsalted butter
  • 1 1/2 -2 tablespoons eggnog*
  • About 1 cup chopped almonds

*I liked my frosting a little bit runnier so it dripped off the edges. You can definitely omit 1/2 -1 tablespoon for thicker frosting.

Directions:

  1. Preheat oven to 450 degrees F. Place the bananas in a glass baking dish in a layer. Top with melted butter and rum. Sprinkle with brown sugar. Roast for about 8 minutes or until slightly caramelized. Let cool slightly.
  2. Meanwhile, in a large KitchenAid mixer, beat the butter, brown sugar, egg and vanilla, or until soft and fluffy. Add the banana and rum mixture and mix to combine. In another bowl, whisk the baking soda, cinnamon and flour together. Gradually add the flour mixture to the banana butter mixture, stirring to combine.
  3. Cover the mixture with saran wrap and chill for about 2 hours.
  4. Once chilled, preheat oven to 350 degrees F. Drop the cookies in dollops onto a cookie sheet lined with parchment paper. Bake for about 11 – 13 minutes, or until golden brown. Let cool completely before you frost.
  5. While cookies cool, prepare frosting by beating the butter, powdered sugar and eggnog together. If too runny, add additional sugar. Once cookies have cooled, frost and sprinkle with chopped almonds.

Super Soft Ginger Cardamom Cookies

Tis the season to eat all the cookies, and stuff yourself silly with other sweets. Where the only pants that fit you, are ones that come with an elastic waist. But, don’t worry, I’m here to help you, with a recipe for cookies that won’t set you back. Before you nose dive into that eggnog, take a quick peak at these skinny sweets. (All sung to the tune of Tis the Season!)

I would make this entire post sung to the tune of a Christmas song but it’s only 8:26 and I’m just halfway through my first cup of coffee. An intro is all you get. Even if I’m too tired to sing you jolly tunes this morning, I can assure these cookies are worth singing about. SUPAH soft, fluffy, chewy and incredible, these cookies are perfect for the holidays. If they actually make it that long, because they probably won’t.

While visiting my friend Julie on Monday, she handed me the most perfect molasses cookie. I honestly couldn’t stop thinking about it the entire drive home. I knew these would be fantastic for the holidays because they’re traditional with a slightly skinny spin. Instead of using all buttah, I subbed in some applesauce, which is why they came out so moist, fluffy and delicious.

You could totally glaze these with some white chocolate for added sweetness, but I found them perfect on their own.

I actually had to hide them yesterday to keep myself from mindlessly munching. Knowing full well that my mother will have 2500 different kinds of cookies for Christmas next week, I should probably fast on sweets this week. Starting tomorrow because I’m definitely having a cookie for breakfast.

Super Soft Ginger Cardamom Cookies

Yields about 24 small cookies or 14 large ones. Recipe slightly adapted from All Recipes.
Prep time: 10 minutes
Cook time: 14 minutes

Ingredients: 

  • 2 1/3 cups all purpose flour
  • 1 1/4 teaspoons ginger
  • 3/4 teaspoon cardamom
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda
  • Dash of salt
  • 1/2 cup (1 stick) unsalted butter
  • 1/4 cup unsweetened applesauce
  • 2/3 cup brown sugar
  • 1/4 cup white sugar
  • 1 large egg, room temperature
  • 1/4 cup molasses

Directions: 

  1. Line a baking sheet with parchment paper and set aside.
  2. In the stand of kitchen aid mixer, beat the butter, applesauce, sugars, egg and molasses together. Beat until creamy. In another bowl, whisk the flour, cardamom, cinnamon, baking soda, salt and ginger. Gradually add the flour mixture to the sugar mixture, beating well after each addition. Beat until mixture is thick.
  3. Cover the mixture with saran wrap and chill for at least 2 hours.
  4. Once chilled, preheat oven to 350 degrees F. To make large cookies, use an ice cream scoop to scoop out cookies onto the parchment paper. For regular size cookies, use a regular spoon. Bake for about 10 – 14 minutes or until golden brown.
