Eat Skinny Be Skinny: Multi-grain waffles

Thanks to my fiance’s wonderful parents and their engagement present [Oyster belgium waffle maker], I got to try this delicious recipe out this weekend! For other breakfast lovers out there who shy away from pancakes and waffles, try this recipe out for a satisfying, tasty and healthy option of your old-time favorites! Recipe courtesy of Food Network.

Ingredients

  • 2 cups buttermilk
  • 1/2 cup old-fashioned rolled oats
  • 2/3 cup whole-wheat flour
  • 2/3 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs, lightly beaten
  • 1/4 cup packed brown sugar
  • 1 tablespoon canola oil
  • 2 teaspoons vanilla extract

Directions

  1. Mix buttermilk and oats in a medium bowl; let stand for 15 minutes.
  2. Whisk whole-wheat flour, all-purpose flour, wheat germ (or cornmeal), baking powder, baking soda, salt and cinnamon in a large bowl.
  3. Stir eggs, sugar, oil and vanilla into the oat mixture. Add the wet ingredients to the dry ingredients; mix with a rubber spatula just until moistened.
  4. Spoon in enough batter into a waffle iron to cover three-fourths of the surface (about 2/3 cup for an 8-by-8-inch waffle iron). Cook until waffles are crisp and golden brown, 4 to 5 minutes. Repeat with remaining batter.
  5. Add a dash of low-fat syrup, fresh fruit and a dollop of fat-free whipped cream and enjoy!

Nutritional Information: 188 calories, 4 g.m. fat, 8 g.m. protein

Nutrition in the News: The new focus is on prevention

The health bill is gaining more traction in the nutrition-fitness world as more measures are being taken against obesity and more focus is being placed on prevention. According to an article in the NY Times, published in Sunday’s edition, the health reform bill is putting more eggs in the prevention basket, which is what needed to happen all along.

As I mentioned in a past NITN[Nutrition in the News], the health bill is taking a stronger stance on obesity by forcing all restaurant owners with 20 or more stores to post nutritional information in their venues, placing special importance on the fast food industry. By providing this knowledge to consumers, the hope is that this will work to prevent over-eating and eating fatty foods, which in turn, can help to prevent obesity related deaths and help to dwindle the obesity epidemic.

The bill also discusses how most insurance companies will have to cover all recommended screenings and preventative measures [such as cancer screenings], which will do wonders to help give people the necessary tools and the necessary time to fight off deadly diseases. Medicaid and Medicare are also going to have to start providing patients with free physicals and yearly wellness visits.

Not only that, but there are also grants and amendments being issued under the bill that will provide funding to communities for more bike paths and playgrounds.

Many companies and employers are focusing more on prevention as well by providing health perks to their employees, such as comped gym memberships, free race entries and having blood drives and flu shots on site. Not only does this help keep employee’s safe and healthy, it boosts morale and can get the employers some perks of their own, such as tax breaks.

One of the reasons I support this bill is how proactive it is in enforcing healthy habits among Americans. A focus of this bill, especially as it relates to nutrition, is on prevention, which is so much more important than most people realize. [And is alot easier to practice as well!] By providing calorie counts and fat totals, it is giving people the necessary ingredients to choose healthier options, which will work to prevent obesity and obesity related complications. Providing employees with incentives to work out and get flu shots helps to prevent disease spreading [which is all to common in a tight-knit office] and helps to instill healthy habits in employees.

A hope I have for the bill is that it shows us how we all need to be a little bit more cautious in our own lives and work to prevent many of the diseases and complications that kill millions of a us a year.

Prevention can save our lives, so why not support something that reinforces that?

Eat Skinny & Be Skinny: Scallops with Lemon Pasta

What You’ll Need

  • 12 ounces sea scallops, thawed if frozen [for best results, use fresh]
  • 2.5 lemons
  • 4 tablespoons olive oil
  • 1 pound asparagus and red peppers [cut both into chunks]
  • 1 red [or yellow] onion
  • Sea Salt, Pepper
  • Black pepper, to taste
  • 2 to 3 fresh basil sprigs, including stems
  • 2 tablespoons fresh basil leaves, cut into strips
  • 1 box whole wheat pasta

How to Make It:

  • Rinse the scallops and pat dry. Set aside.
  • With a sharp knife, cut the lemons in half. Use a lemon/orange juicer and squeeze the juice out of the lemon. Then scrape the peel from the lemon using a cheese grater. Put both aside.
  • Heat 1 tablespoon of the olive oil in a skillet over medium heat. Add the asparagus, peppers and onion and cook for 2 to 3 minutes; season with salt and pepper. Transfer to a serving platter and keep warm.
  • Boil enough water for the pasta. Add salt so the pasta doesn’t stick to the pan. Drain when finished.
  • Combine the lemon peel, basil sprigs, and remaining 2 tablespoons of olive oil in the skillet. Cook for 1 minute or until heated through. Remove the lemon peel and basil sprigs with a slotted spoon, leaving the oil in the skillet; discard.
  • Cook the scallops in the hot oil for 3 to 5 minutes or until opaque, turning once. Season to taste with salt and black pepper.
  • Pour the lemon juice and a the other  1 tbsp of olive oil over the pasta and toss it well.
  • Place the scallops and asparagus/pepper mixture over the pasta. Cut the remaining lemon into wedges. Garnish the scallops with lemon wedge and basil.

Nutrition facts per serving: 390 calories,  20g fat and 1 gram of fiber.

 Now I wouldn’t say I’m completely clueless when it comes to computers and the world of html, but there are times when I’m looking at internet code and feel like I’m trying to read hieroglyphics. Luckily, I’m engaged to one of the smartest men alive who happens to know all things computer and code, which came very helpful when I decided to branch into web site building. I love my blog, don’t get me wrong, this internet diary has changed my life, completely. But I want more. [Duh, it’s me, I always want more!] I want more options, more upgrades and a higher visibility. Nutrition, health and writing are my passions and I want to share them with everyone in the world, and I think a website will help me broaden my audience.

 With that being said, my fiance and I sat down on day 20 and created my web site. Right now, it’s not perfect and doesn’t have all of the bells and whistles I want, but it’s there, sitting all so lonesome in its own internet domain! And what makes the whole thing even more exciting is that I did most of it on my own! Watch out Google, I’m taking over the internet world!
