Lately, I’ve been getting tons of questions from people asking the best way to shape up and lose weight this year WITHOUT the use of a gym. As a woman who works almost 12 hours a day and has a hectic personal life, I’m completely understanding of this request. I barely have time to blink better yet go to a gym. So to get my workout in, I’ve been hitting up the fitness DVD’s, which can be just as effective as a gym workout, especially if you have the right equipment! Eat Skinny Be Skinny: Low Fat Broccoli Alfredo
As most of you know, I got a promotion at work. Yay! Although it’s an exciting opportunity, it brings with it A LOT more work, which means A LOT more time spent inside the four walls of my downtown office building. Instead of working from 8:30-4:30, allowing me to be home by 5:30, I’m now working from 8:30-6 (at the earliest), getting me home at around 7:15! And trust me, by the time I get home, the last thing I want to be doing is whipping up a fancy meal. However tired I may be though, I’m determined not to let cooking slip through the cracks. It’s one of my favorite activities because of how therapeutic and relaxing it is. When I’m chopping, dicing and sauteeing, my mind is at ease, not focused on the daily 9-5 stressors of my job or wedding planning anxiety. So I fought off my exhaustion and apathy last night and whipped up a lighter version of one of my decadent favorites, pasta with Alfredo sauce. For added protein, slice up a chicken breast! Keep in mind, this dish does still have around 400 calories, so pair it with a light salad or veggies if you are trying to stay around 500-550 calories for dinner. Atlhough the calorie count is higher, the fat grams are considerably low, coming in less than 10 grams for a 1 cup serving! That’s 10 grams less than regular sauce!

Happy Saturday! I woke up to a gorgeous snowfall! I was so excited I hopped out of bed and played outside with the dogs for a bit 🙂 Unfortunately, the weatherman has lied to me again and it’s not snowing anymore. I don’t ask for much, weatherman, just some pretty flakes to look at while I work out! Either way, I’m not letting go of my snow hope! I’m having a relaxing weekend and a little bit of fresh dusting would make it all more perfect!
As you can see, there is barely anything sticking to the ground!
As I’ve tweeted, my darling fiancée is out of town at his bachelor party in Atlanta so I have the house all to myself, which means I get to watch LMN, clean the house and cook food I know my darling hubby-to-be would never eat. On top of what I just mentioned, I’m also going to break out the semi-dusty Tae Bo DVD I got for Christmas last year. [I’ve used it since then, I’m not that bad!] I absolutely love Tae Bo, it’s one of my favorite workouts. It’s such a great mix of cardio and strength training and I’m always incredibly sore the next day.

Superfood of the Month: Oatmeal
Did you know that January is National Oatmeal Month? Don’t worry if you didn’t, I just found out a few days ago! Whether you knew or not, it’s never too late to celebrate this healthy food by indulging in a bowl for breakfast or having a cookie for dessert! I like morning oatmeal with fruit [like blackberries], brown sugar, almonds or walnuts and almond extract. I call it “the kitchen sink cereal.” Sounds weird, right? It’s so delicious though! So why does this common breakfast food have a whole month dedicated to it? It has amazing health benefits! Oats are full of fiber, can lower bad cholesterol and are full of vitamins and minerals!
Eat Skinny Be Skinny Dessert: Brownie Bites
Even though I’m ‘dieting’, I can’t give up chocolate. Well, I could, if I had to. But that’s not a position I plan to put myself in 🙂 Chocolate, in moderation, is known to help reduce anxiety and stress, and with how stressed I’m going to be these next three months, I’m going to need a constant dose of the sweet stuff. Along with having a desperate sweet tooth, I also am on the lookout for dessert recipes for the sweets table at our wedding. I’m going to be doing some of the baking so I will be busy taste testing recipes that are delicious, elegant, southern, bite-sized and visually appealing. Lucky for you, I will feature them all on here! This recipe only makes about 24, so if you are cooking for a large party you will want to double it. I ran out of chocolate, otherwise I would have dipped them for an extra fudgey bite. A dash of powdered sugar is just as nice, though!
