Watermelon Feta Salad
Ingredients:
- 1/2 small watermelon, chopped
- 1/2 cucumber, chopped or sliced
- 2 small vine ripened tomatoes, chopped
- 4-6 chives, minced
- 2 tablespoons fresh lemon juice
- 2 cups of fresh blueberries
- 1/2 -3/4 cup of feta
- Fresh dill, chopped for garnish
Directions:
- Cut a baby watermelon in half (save the other half for later). Cut watermelon into cubes, discard rines.
- Place watermelon into a large salad bowl. Set aside.
- Chop cucumber, tomatoes and chives. Add to the bowl. Mix in blueberries, dill, feta & lemon juice; mix with a wooden spoon. Eat and enjoy!
Nutritional information per cup: 90 calories, 6 grams of fat, 10 grams of carbohydrates and 6 grams of protein.
