Super Simple Roasted Red Potatoes

Serves about 4. Inspired by Food Network.

Cook time: About 50 minutes

Ingredients:

Directions: 

  1. Preheat oven to 400 degrees F.
  2. Place the potatoes in a glass or metal 9 x 13 baking pan and toss with olive oil.
  3. In a bowl, mix the parsley, dill, diced green onion, pepper, salt and crushed red pepper. Sprinkle over the potatoes and lightly toss to coat.
  4. Bake for about 50 – 60 minutes, stopping to toss the potatoes up twice during cooking to evenly cook. You want the sides to be browned and crispy and the potatoes to be soft (but not mashable) when pierced.
  5. Serve with fresh parsley and enjoy!
