Mini Pistachio Pudding Muffins

  1. Preheat oven to 350 degrees F. Line a mini muffin pan with mini muffin liners.
  2. Whisk the flour, pudding, sugars, baking powder, baking soda and dash of salt together in a large mixing bowl. Add eggs, milk, vanilla and applesauce, mix to combine.
  3. Fill each muffin liner about ¾ the way full with batter.
  4. Bake for about 12 – 15 minutes, or until a toothpick inserted in the middle comes out clean.
