Bakery Style Blueberry Muffins
Yields about 12 muffins. Inspired by Baked Perfection.

Cook time: 16 – 18 minutes
Ingredients:
- 2 eggs, room temperature
- 3/4 cup brown sugar
- 1/3 cup vegetable oil
- 2 1/2 tablespoons unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 1/2 cups all purpose flour
- 1/2 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 cup nonfat Greek yogurt
- 1 1/2 cups blueberries
- 1 tablespoon lemon zest
For the topping:
- 1/2 cup white sugar
- 1/3 cup all purpose flour
- 1/4 cup butter, cut into small pieces
- Dash of ground cinnamon
Directions:
- Preheat oven to 400 degrees F. Line a muffin pan with liners.
- In a large bowl, whisk the flours, baking soda, brown sugar and cinnamon. Make a well in the center of the flour and mix in the eggs, oil, applesauce, vanilla and Greek yogurt, mix to combine. Carefully stir in the blueberries and lemon zest.
- Fill each liner about 3/4 the way full with batter.
- To make the topping, mix the sugar, flour and cinnamon together. Using a pastry knife, cut in the butter until mixture resembles coarse sand. Top the batter with the crumble topping.
- Bake for about 20 – 22 minutes, or until golden brown. Serve immediately.
