Chocolate Peanut Butter Chia Seed Smoothie

AKA all of your days protein and fiber in one delicious jar. Seriously. That’s why I suggest each one of these power smoothies serves two people b/c you aren’t going to be able to finish it. I barely got to half way through this jar without feeling almost “too” full.

Welcome to day two of peanut butter week, y’all! Hope your Tuesdays (or Wednesdays for my friends over the pond in Australia) are off to a good start. Mine could have started 10,000 times better, but I’m not dwelling on it. I’m determined to make today a good one. And you know what, kicking off your day with a smoothie that tastes like ice cream is not a bad way to make that happen. I’m not kidding when I say this tastes like ice cream. Okay, so it’s a little thicker than that, so maybe super rich custard? It’s basically dessert for breakfast. But don’t worry, it’s healthy. It has a few tricks hidden in that luscious cocoa belly, like three tablespoons of fiber packed chia seeds!

Ever used these before? I sure had not, which is dumb because I have a huge bag of them whistling at me every time I open the cupboard. So finally, after another series of cat-calls (chia seeds are rather aggressive), I threw some into a blender with a pound of other deliciously healthy ingredients and made the thick jar of dark chocolate lovin’ you see right in front of ya.

I’m not a breakfast person (I know, everyone shun me and then send me memos that declare the importance of this meal). This is another reason I know I’m meant to be French. I’d much rather eat last night’s baguette and a coffee than some flan cereal. This smoothie though might change things. It’s so FILLED with fiber you won’t be hungry until June 1st and it tastes like dessert. Curbed appetite and satisfaction for my fat kid sweet tooth? Win double freakin’ win.

Chocolate Peanut Butter Chia Seed Smoothie

Serves about 2. (About 1 cup serving size)
Prep time: >5 minutes

Ingredients:

*Add additional milk if too thick.
**If you don’t have this available, sub in additional skim or chocolate milk!

Directions: 

  1. Pour all of the ingredients into a blender and pulse on low until mixture is thick and creamy. Add more milk if it’s too thick for you. Pour into a cup and enjoy!

Fat: 20.5 grams
Carbohydrates: 30.5 grams
Fiber: 6.5 grams
Protein: 13.5 grams
Weight Watchers Points: 9

    I need this in my life. Just wondering what the coffee creamer does - I don't drink coffee, so wondering if I could use something else. Is it a powder or liquid - more milk maybe?

    Hey Erin! You can use milk or chocolate milk in it's place! It just offers a cream like consistency!

    Ooo I love peanut butter week! Haha best idea. ever. Love this smoothie too - would be so much more motivated to sit down with breakfast if it involved chocolate and peanut butter :)

    Hmmm! Sounds and looks delicious. I've had chia seeds in baked goods, but never had it in smoothies. Very clever and I love healthy & delicious smoothie like this. I'd totally look forward to wake up every morning to drink this.

    Hope your day ended up turning out better and I love the idea of creating all sorts of peanut butter recipes for peanut butter week! PB is one of my guilty pleasures. I've heard a great deal about the benefits of chia seeds, so I need to try them out soon! I could really use a fiber smoothie! ;)

    Hello Claire, I am a little behind discovering this great post/recipe :) Allow me to ask a question. Is there a special reason why you use frozen bananas rather than fresh or ripe ones? Just wondering in case I am missing an important wellness information... (Always eager to educate myself on healthy eating) ;)
    I did use a ripe banana this morning, as a result I did not have add honey. And I used hazelnut "milk" instead of the coffee-mate as I did not have any. Do you have an option to share about Hazelnut "milk"?
    The smoothie tasted great. So thank you so much for sharing your recipe.

    Frozen bananas are important, they create an ice cream-like consistency. They also chill the drink so that there is no need to add ice which would dilute the taste. I've been loving this recipe, although I sub all the chocolate and sweeteners with hot chocolate mix (I used Swiss Miss). I also use regular milk and don't bother with the creamer. So it's simply frozen bananas, peanut butter, milk, hot chocolate mix, and chia seeds. Delicious combination! :)
